En el marco de la \u201cCampa\u00f1a de mejoramiento participativo de tomates locales 2025-2026\u201d, realizamos una jornada de evaluaci\u00f3n sensorial abierta a la comunidad, m\u00e1s de 50 personas se convirtieron en &#8220;catadores&#8221;.<\/p>\n\n\n\n<p>El objetivo fue claro: integrar la percepci\u00f3n del consumidor a los procesos de mejoramiento de semillas. Como bien se\u00f1al\u00f3 David, buscamos sumar la mirada de la comunidad a la evaluaci\u00f3n agron\u00f3mica tradicional para identificar esos matices de gusto que los procesos comerciales han dejado de lado.<\/p>\n\n\n\n<p>Durante el encuentro, se analizaron atributos como color, aroma, textura y sabor de diversas variedades locales y experimentales:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Naranjada Amarilla<\/li>\n\n\n\n<li>Carcione (tomate platense)<\/li>\n\n\n\n<li>Cherry 113<\/li>\n\n\n\n<li>No me olvides<\/li>\n<\/ul>\n\n\n\n<p>Para tener una referencia clara, tambi\u00e9n utilizamos ejemplares de verduler\u00eda como testigos. La diferencia, seg\u00fan comentaron los participantes, es notable: el tomate local cuenta una historia de territorio y cuidado que el comercial suele omitir.<\/p>\n\n\n\n<p>\u00a1Pr\u00f3ximamente
